Sourced from high-altitude backyard gardens in Dhankuta, Makwanpur, and Ilam, Nepal, these fiery little chillies are hand-watered, sun-ripened, and grown without synthetic chemicals. Freeze-drying preserves their intense heat (100,000–350,000 SHU — yes, really), their fruity undertones, and their vibrant colour in a way heat-drying simply can't.

How to use it
✦ Seasoning & finishing — Sprinkle over pizza, pasta, eggs, noodles, or avocado toast just before serving for a fruity, fiery kick
✦ In cooking — Temper in hot oil or ghee at the start of a curry, dal, or stir-fry to bloom the flavour into the whole dish
✦ Chilli oil — Infuse into warm neutral oil with a pinch of salt and whole spices. Use on dumplings, noodles, rice, grilled meats, and roasted vegetables
✦ Chilli salt — Mix with flaky sea salt at 1:3 ratio. Finish grilled corn, roasted potatoes, fresh mango, or the rim of a spicy margarita
✦ Pickling & fermenting — Add to vegetable pickles, fermented condiments, or homemade hot sauce for a fruity depth that builds over time
✦ Infused vinegar — Steep in apple cider or rice wine vinegar for a week. Use as a spicy dressing base or condiment
